I love to take waterlilies and lotus flowers but it wasn't the right time to catch the lotus flower open as I was there at one of the hottest part of the afternoon....2.30pm...damn hot!!!

For landscape & flower shooting better with vivid on as color will pump out but on human portraits is not good as skin tone will look warm & reddish
I learn the hard way... :(

Yep - vivid is nicer but you may want to tone down the saturation just a wee bit.
For shooting in harsh sunlight, you can always ask a friend to hold up one of those black semi-transparent mesh-like car shades over the flower : this will help to diffuse the bright sunlight.
I'm sure many of the young eligible male photogs here will volunteer to be your coolie cum general helper...:D:D:D
