Ok. Converting to B&W is easy if you decide to just click on that "Greyscale" or "Black & White" button. But there's no fun in doing that. Although there are many ways to do this - effectively, here's one of my favourites. Using the DESATURATE option - and add some shaaazaaazzz to it, to bring out more tonal control in B&W :D

Firstly, open up that photo you wanna convert in PS and create a duplicate layer of it. While the duplicated layer is being selected, go to LAYER --> NEW ADJUSTMENT LAYER --> HUE/SATURATION. Select this, when the next menu comes out, make sure the mode is in NORMAL and the opacity is set to 100%. Then and click OK, just like shown in the screengrabs below.

At the HUE/SATURATION menu, you would wanna adjust the SATURATION slider all the way down to the value of -100, while making sure you are adjusting the values for MASTER (and not any other color mode). This is shown in screengrab #2 below. Now anyone can stop at this point and be happy with a mediocre B&W conversion... but we're gonna take this one step above, and have more control over the tonal range on B&W. :D

Next, make sure you select back to the image layer, and repeat by adding another adjustment layers for HUE/SATURATION. This time, make sure you choose the MODE = COLOR and OPACITY = 100%. Click OK after that.

At this HUE/SATURATION menu, you can now proceed to adjust the tonal range of the B&W effect you would wanna achieve. Simply slide the 3 sliders (HUE, SATURATION & LIGHTNESS) and notice how the tonal range would change. Once you are satisfied, click OK and you are done for this process. :D
