All Sifu and Master, mind to share which mode A S M usually all Sifu and Master use for actual day wedding?

Day time - Aperture priority mode
Night time - Manual mode
Funky creative time - Shutter priority mode
So, to answer you - all modes are useful if you know how and when to use them. :)

so far the 3 modes : A, P and M is more than enough to keep my hands busy

Depends on the lighting/action/event.
I'd say most the time I use A maybe 70% then when the ambient level is fixed or I'm strobing I'll use M about 25% then about 5% on S when I want a certain movement effect.

Concerning flash, do we stick to ETTL and just fire away bouncing of ceiling? I know that wedding photography is a fast fast world where you do not have much time to compose at times.
So how do you juggle setting the flash,camera and stuff like that?
Just stick to P/potrait mode/Av and keep flash on ETTL?:rolleyes:

The ambient exposure won't be changing.
Usually use M to get low shutter speed (lower than 1/60 fixed by Av) and can use flash in Manual (maybe 1/8) or iTTL.
